Herby Green Goddess Dressing

dairy free, vegan and paleo

I pour this tangy, spicy, garlicky, herby goodness on everything from salad to roasted vegetables to tacos- this dressing adds serious flavor to just about anything you cook up!

In a blender or food processor mix up:

1/2 cup filtered water

2 TBS raw cashews (6-8 cashews)

2 TBS dijon mustard

1 clove garlic

1 cup avocado or olive oil

5 tsp lemon juice

2 TBS chopped onion

1 cup mixed fresh herbs like basil, mint, dill, parsely, terragon, cilantro or chives

salt and pepper to taste

This dressing will keep in a jar in the refrigerator for about a week (if it lasts that long!)
