Pumpkin Chai Muffins

Makes 12 muffins

PREHEAT OVEN TO 350

Mix together in the bowl of food processor:

1/2 cup coconut flour 

3/4 cup almond flour

1/2 cup arrowroot

1 tsp baking soda

1 tsp baking powder

2 TBS chai tea spices, ground 

1 tsp cinnamon

1/2 tsp salt

Mix together the following ingredients in a medium bowl and then add to dry ingredients:

⅔ cup coconut oil

½ cup coconut sugar

2 eggs

1 ½ cups cooked pumpkin (1 can)

Once dry and wet ingredients are well mixed, gently fold in:

½ cup chopped walnuts

optional: top with chopped macadamia nuts

Bake in lined muffin tin until tops are golden brown about 18-20 minutes
